Oatmeal bread

A hearty bread made from both oatmeal and rice flour from Lisa's Choice.

Oatmeal bread

Requirements
Greased (cake) tin with a diameter of 25 cm

Ingredients

450 grams Lisa's Choice Oatmeal
2 tbsp dry yeast
370 ml warm water
60 ml olive oil
2 tbsp honey
50 grams tapioca flour
50 grams Lisa's Choice Rice Flour
2 tsp xanthan gum
1/2 tsp salt
1/4 tbsp cinnamon
4 eggs

Preparation

1. Grind the oatmeal into a fine flour using a food processor (as finely as possible).
2. Meanwhile, mix the yeast and warm water, and let it rest for a few minutes.
3. Combine the yeast-water mixture, olive oil, honey, tapioca flour, rice flour, xanthan gum, and the finely ground oatmeal in a bowl. Mix until it forms a cohesive mixture. Add the salt, cinnamon, and eggs to this mixture. Beat for a few minutes until the dough becomes airy.
4. Transfer the mixture into the greased loaf tin and let it rise for about 45 minutes until the dough doubles in volume.
5. Preheat the oven to 180°C (356°F). Sprinkle some oatmeal over the risen dough and make a few slits with a serrated knife. Bake the bread for 45 minutes. Allow the bread to cool before slicing.
