Oatmeal Blueberry Slice

This delicious slice consists of an oatmeal base, a blueberry filling, and an almond crumble topping. Perfect for breakfast, snack, or dessert. This treat is both gluten-free and vegan!

Oatmeal Blueberry Slice

Ingredients

16 pieces of 5x5 cm each

Square baking tin of 20x20 cm lined with parchment paper

200 grams of Lisa's Choice Oat Flakes
225 grams of Lisa's Choice Flour
75 grams of light brown sugar
1 teaspoon of cinnamon
2 tablespoons of psyllium
90 grams of plant-based butter (melted)
120 ml of maple or agave syrup
200 grams of blueberry jam (choose a variant with less sugar if possible)
30 grams of sliced almonds

Preparation

1. Preheat the oven to 175°C.
2. In a bowl, combine oat flakes, flour, sugar, cinnamon, and psyllium, and mix well.
3. Add the syrup and melted butter, and mix until a homogeneous mixture forms.
4. Set aside 1/4 of the mixture and spread the rest evenly into the baking tin. Use the back of a spoon, a spatula, or your hands to flatten it out. If the mixture sticks too much to the spoon or your hands, you can use a bit of gluten-free flour.
5. Spread the blueberry jam over the base, ensuring to leave a 1cm border around the edges.
6. Sprinkle the sliced almonds over the jam.
7. Distribute the reserved portion of oat mixture in small pieces over the almonds.
8. Bake in the oven for about 25 minutes or until golden brown.
9. Allow to cool thoroughly and cut into 16 pieces.
