Healthy breakfast slices with oats and apple

If you don't have much time in the morning, this healthy breakfast cake with oats and apple is a lifesaver. You can make this super easy recipe all at once for the rest of the week. Slice the cake into 8 pieces after cooling and store them in an airtight container in the fridge. This way, you'll have a few days' worth of breakfast ready. And the longer you store the cake, the more delicious it becomes!

Healthy breakfast slices with oats and apple

Ingredients

Kitchen machine or blender, 20x20cm baking tin lined with parchment paper, preheated oven at 180°C (356°F).

100 grams + 30 grams Lisa's Choice Oatmeal
1 large apple (Jonagold or Elstar), peeled and diced
20 grams shredded coconut
60 grams honey
1.5 teaspoons cinnamon
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
60 grams yogurt (we used Greek yogurt 10%)
2 eggs
15 grams coconut oil or butter



Preparation

1. Preheat the oven to 180°C (356°F).
2. Place all the ingredients in the kitchen machine or blender, except for the 30 grams of oatmeal.
3. Blend the mixture until smooth. Add the remaining 30 grams of oatmeal at the end and stir it into the mixture using a spatula.
4. Pour the mixture into the lined baking tin and bake for about 20-25 minutes. The slices are ready when the edges are golden brown and a toothpick comes out clean.
5. Allow to cool and cut into 8 pieces. Store in an airtight container in the refrigerator.
